Arctic Char: Freshwater Char are found in many parts of northern Europe (especially famous in the Lake District around Lake Windermere) with migratory Char found in Arctic waters around Canada and Alaska. Portion size Arctic Char is successfully farmed all
year round.

Brook Char: This freshwater member of the Char family is distinguished from most Trout and Salmon by a lack of black spots. Farmed in Wiltshire from April to September.
