Sardine / Pilchard

Two names for the same fish.  As the Latin name reveals, these fish are the same species.

Smaller specimens are commonly known as Sardines and larger, older ones Pilchards.

They range in size from 80g–150g, and are ideal for grilling whole and serving as a starter or for barbecuing.

Fished off the UK’s south coast, the French coast and in the Mediterranean, this species tends to prefer warmer waters.

Most of the UK catch (primarily from the south-west of England) is exported to France.
