The Mahi Mahi is also called Dorado or Dolphin fish in some parts of the world. The name Mahi Mahi – which means ‘strong strong’ in Hawaiian – is its commercial name in the UK.  

Mainly found around the Seychelles, the Caribbean and the South Pacific off the South American coast, this is a great-tasting, fast-swimming fish not unlike Jack, Trevally or Kingfish, but with a more flaky texture and a sweeter taste. 

The flavour stands on its own or suits fruity and spicy flavours and salsas – this is a fish which really tastes great with chilli! 

Not always easy to source fresh, but frozen is always available and it freezes well.
