Oreochromis family

A native of the Nile but now farmed worldwide, Tilapia (various species of the Oreochromis family) is very popular in the US and widely used in Asian cuisine. 

The most common varieties in the UK are the orange (pictured), Red and Black Tilapia, available whole from portion size 300–500g fish up to 2kg. 

All Tilapias have firm white flesh, with a mild taste that requires either marinating or an accompanying sauce – both strong and light flavours work, as will any Plaice recipe.
