The commercial availability of Carp comes from farming where it is usually grown to 450g–1.5kg. There are various species including Mirror, Grass and Leather Carp, all of which have tough scales. Wild fish will often have a muddy flavour, but farmed fish less so. Carp can carry strong flavours and portion size fish can be cooked like Sea Bass.
