Gilthead is the most popular and highly regarded Sea Bream, sometimes also known as Royal Bream.
According to Greek mythology, Gilthead Bream were considered sacred to Aphrodite – the goddess of love!
It is a superb-looking fish with bright silvery skin and hints of pink and gold.
Giltheads are successfully farmed in the Mediterranean, giving year round availability in consistent sizes from 300g–1kg. Larger fish can be filleted, and the shape of this fish is also ideal for butterfly fillets, great for filling with pesto;. dill and fennel also enhance the flavour.
With its pinkish, opaque flesh, the popularity of gilthead bream continues to grow as a slightly sweeter-tasting alternative to Sea Bass.
It can be cooked the same way as any other Bream or Bass.
