Bassa and Pangasius

Also sometimes known as River Cobbler, Basa is a species of Catfish native to Vietnam and Thailand and now increasingly farmed as a food fish for the Western market. 

It has white, soft flesh with a fairly open texture and a mild flavour and aroma. 

It is also used in processing as a lower-cost alternative to wild-caught white fish species such as Plaice. 

Basa’s blandness makes it a good blank canvas for the addition of more strongly flavoured ingredients in recipe dishes.
