Also known as Saithe, Coley has a long tapered body, with a slight blue tint.
Specimens range from 500g–6kg but are usually only available as fillets.
This fish can often be a good-value option, but needs to be as fresh as possible.
The flesh is often a dull, off-white colour when raw but lightens during cooking and has a fine flavour.
