Two species in the Istiophorus family, similar to Marlin but the Sailfish has a sailshaped fin on its back. 

This unfolds when the fish is swimming at speed – up to 60 miles per hour! 

Although taste and texture is similar to Marlin, Sailfish is not as widely available.
