Blue Marlin are deep cobalt blue on top and silvery white on the bottom.
This very large fish is from the Istiophoridae family, with a distinctive elongated body, spear-like snout or bill and a long, rigid dorsal fin.
Marlin can grow as large as 300kg, though at this size the meat will not be such good quality – loins of up to 3kg are ideal.
There are several species of Marlin – black, blue and white – though all are fairly similar.
