This is the true Kingfish species – other fish such as King Carangue, Yellowtail Kingfish and Pompano are sometimes mistaken for Kingfish but, although related, are actually Jack or Trevally. 

This is a great fish, with rich, oily, firm flesh, and like Mackerel, it works better with sharp flavours.
